The effect of pH level change on the rate at which catalase (yeast) breaks down hydrogen peroxide (H2O2(aq)).How does a change in pH affect the rate at which catalase breaks down hydrogen peroxide? Inorganic catalysts are used in many industrial processes, usually transition metals. Enzymes are organic catalysts, meaning that they are present in all living organisms and are used in processes such as fermentation (used in beer and wine making). “Because enzymes are chiral, their binding sites are naturally asymmetric. This asymmetry leads to enzyme stereospecificity, that is their ability to distinguish between substrate enantiomers and catalyze reactions with only one of the stereoisomers. The situation can be likened to a baseball glove--it is asymmetric so that it can accommodate your asymmetric hand--if it were not, it would not fit very well. The same can be said of enzymes, if their binding sites were not stereospecific, they would not bind to their chiral substrates very well.”
