Nowadays people want to eat healthy, we are all trying to find the right foods to keep us healthy and trying different diets to keep our bodies in shape. A lot of people have taken the path of being a vegetarian or vegan. Vegans are people who don’t eat any animal products at all, not even dairy products they rely only on plant based foods and vegetarians eat no animal flesh such as meat, poultry or fish of any kind, but they do eat dairy products such as milk and cheese. Both vegans and vegetarians need to get their protein form somewhere. One of the best protein sources are soy products and I my self am a vegetarian and get my protein from soy products. Soy is not a new product in the food industries and has become more involved with the whole “healthy food” phenomenon. Soybeans contain all three of the macro-nutrients required for good nutrition, these include: protein, carbohydrate and fat, as well as vitamins and minerals like calcium, folic acid and iron. Macro-nutrients serve as the major sources of energy for the body; they also provide materials for tissue growth and repair. Soybeans are the only vegetable that contains a complete source of protein.

Isoflavones account for approximately three-fourths of soy’s benefits while its protein is responsible for about one-fourth and are contained in soybeans, chick peas and other legumes. Isoflavones are a type of phytoestrogen that is very similar to the human estrogen and are part of the phytochemical class. Phytochemicals are found only in plants. Isoflavones are contained. They have antioxidant properties which allow the protection of the cardiovascular system from oxidation of LDL cholesterol or what is known as bad cholesterol. Isoflavones also help prevent the buildup of arterial plaque, which reduces the risk of coronary heart disease and stroke.

Because of the high agricultural value and other non food uses, soy is known as the “miracle bean/crop”. It is the world's foremost provider of protein and oil. Farmers plant soybeans in the late spring. During the summer, soybeans flower and produce 60-80 pods, each holding three pea-sized beans. In the early fall, farmers harvest their crop for these beans which are high in protein and oil. A 60-pound bushel of soybeans yields about 48 pounds of protein-rich meal and 11 pounds of oil. Soybeans are grown in the United States more than anywhere else in the world. In 1998, U.S. soybean farmers harvested a record 2.757 billion bushels (75.04 million metric tons) of soybeans.
