Potato cake


             POTATO CAKE.
             Many people have elaborate specialties they like to serve on New Year's Eve, fancy dishes like caviar and oysters which were different from when I was growing up. This simple delicious dish was always served on New Year's Eve in my family. It's a little bit like a beef pot pie or a shepherd's pie, Italian style, but not quite because it doesn't have any pastry. The "rice- potato mixture takes the place of the pastry, which is why we call it potato cake.
             You can serve 6 to 8 as a first course or main dish. The ingredients you need are ¼ cup of olive oil, 1 onion, chopped, 1 clove of garlic, 1 pound of ground beef, 1 stalk celery chopped, ½ cup of dry white wine, 1/3 cup of tomatoes with 1 cup of water, ½ cup of peas, ½ cup of dice ham, 1 cup of mozzarella cheese sliced, ¼ cup of chopped fresh parsley, 4 ½ pounds of potatoes peeled, 7 tablespoons of butter, 2 eggs, 4 cups of grated parmesan cheese, and ½ cup of breadcrumbs.
             Heat the olive oil in a skillet over medium heat. Fry the onion and garlic for 4 minutes, until lightly browned. Add the beef and fry for about 8 minutes, until the meat is browned. Add the celery and wine and cook until the wine evaporates. Add the tomatoes, lower the heat, and cook for 20 minutes. The mixture should be dry, not watery. Add the peas, ham, mozzarella cheese, and parsley and remove from the heat. Season with salt and pepper.
             Boil the potatoes in salted water until tender. Drain and stir into a large bowl using wooden spoon. Add 6 tablespoons of the butter, the eggs, parmesan cheese, and salt and pepper to taste. Combine well.
             Preheat the oven to 425 degrees F. Grease a 10-inch pan well with the remaining tablespoon butter. Sprinkle with half the breadcrumbs. Using three-quarters of the potato mixer. Sprinkle the top with the remaining breadcrumbs.
             Bake for 20 minutes. Reduce the oven to 325 degrees and continue to bake for another 20 minutes until golden brown.
