In pot, brown cumin seeds in oil, then add paste and brown them. Add salt, chill, tamarac, juice of tamarind. Fry 5min. Add water, then eggplants(cut into fourths until stems). Add green chilli after 5min. Boil on med heat till done. Garnish with cilantro.
             MONCHEE(PAKORAS IN CURRY).
             Make a paste of:.
             Coriander powder 6tbspn.
             Red chilli 1/2ts.
             Tamarac 3/4ts.
             Salt.
             Metti Seeds/leaves(browned in oil) 1ts.
             Little water.
             Make polki:.
             Grounded split moong dhal 1cp.
             (has to be pre-soaked).
             Red chilli powder 1/4ts.
             Salt 1/2ts.
             Water.
             ===Fry polki in oil. Meanwhile fry metti seeds in oil till brown. Add paste and fry on low for 10-15min. After add ½-3/4 water of the height of pot. Boil. Add fried polk and cook on med. Heat for 20-30min.
             BEEF STEW.
             Beef cubes 1/2lb.
             Onion(med.slice) 1lb.
             Garlic 10pc.
             Whole red chilli 4-6.
             Whole coriander 4-6.
             Whole garam masala 4-6.
