The catalase (or other enzymes) cause a process were big molecules are broken down into smaller ones, this is called Catabolic. .
             If the temperature is too high the enzymes will be denatured because the special receptors will become deformed and the particles of the hydrogen peroxide wont fit into it anymore therefore the molecules will not be broken. .

             Diagram:.
             Set apparatus as shown in the diagram. Cut out a piece of potato using the 10mm cork borer, then cut to a length of 4cm long and place in boiling tube. Measure out 25cm3 of hydrogen peroxide with a measuring cylinder into a boiling tube. The boiling tubes should be placed in the temperature of the test that your about to carry out i.e. in room temperature or in the water, for five minutes. Add the potato into the boiling tube of hydrogen peroxide and place a bung 1cm into the boiling tube, with a delivery tube leading to a beaker full of water and into a upside down burette full of water causing the oxygen to rise to the top of the burette so that you read the amount of oxygen produced.
