People these days have less time, resources and ability to cook for themselves. This means that I am prepared to offer society lighter, healthier foods, at reasonable prices. Today, the food service industry is the third larges in North America and according to Statistics Canada accounts for over $249 billion annually in sales. Independent restaurants account for about 15% of that total. The average North American spends 15% of their income on meals away from home. The number has been steadily increasing for the past decade. Further information from the Folkney Report, November 2001 notes that the restaurant industry has passed the national GNP by 40% due to changes in lifestyle, economic climate, and increase in variety of products. Each year about 600 new restaurants open each month and many more are needed to meet the demand. The Folkney Report also reports that modern living builds up more demand and people will eat more away from home or increase up to 30% over the next five years (DMR Industrial Report, April 2001). According to the 2001 National Restaurant Report, it predicts how the industry might look by 2005:.
a) consumer sill spend more money eating out;.
b) independent restaurants will be more creative;.
c) nutritional concerns and flavours will be important;.
